Many Western countries such as Scotland face the challenge of reducing carbon emissions associated with food systems (Garnett 2011) whilst also improving dietary nutritional intake (Scottish Government 2016). Therefore a diet that is both healthy and sustainable may offer the solution for meeting these two crucial aims. However, the definition of such diets is broad and includes many dietary aspects and metrics of sustainability. This seminar details the components of a healthy and sustainable diet with a particular focus on nutrition, health, affordability and carbon emissions.
